Summer Time Fried Chicken and Quick Pickles

Impress your family and friends with this Holland House White Cooking Wine and buttermilk marinated fried chicken paired with quick Holland House White Cooking Wine and Holland House White Vinegar pickled vegetables that highlight the bounty of summer combing honey, mustard seed, and fresh dill.  Perfect for a picnic or weekday dinner.


1 whole chicken (about 3 lb.), cut into 8-10 pieces
1 cup HOLLAND HOUSE White Cooking Wine
1/8 cup Cajun seasoning with salt (Tony Chachere’s) 
1 cup buttermilk 
1 Tbsp. black pepper 

Flour Mixture
7 cups all-purpose flour
1 cup cornstarch
3/4 cup cornmeal
1 Tbsp. Cajun seasoning (Tony Chachere’s)
1 Tbsp. black pepper

Oil, for frying As needed


Combine the Holland House White Cooking Wine, Cajun seasoning, buttermilk, and black pepper. Place the chicken pieces in the marinade and let sit at least one hour.

Preheat the fryer oil to 350ºF.  In a medium bowl, thoroughly mix all flour dredge ingredients.

When the chicken is finished marinating, dredge the pieces in the flour mixture until completely coated.  Shake off excess flour.

Begin frying the same cuts of chicken, as each cut will cook for a different amount of time.

Fry the chicken until cooked through (165ºF internal temperature) and the breading is golden brown and crisp.

Season lightly with salt and let rest for a few minutes before enjoying.

  • Have your local butcher cut your chicken in either 8 or 10 pieces.   You should get 2 wings, 2 thighs, 2 legs and 2 breasts.  You can split the chicken breasts so you will have 4 breast pieces.  It is preferable to let the chicken marinate overnight as this will intensify the flavor but also tenderize the bird more thoroughly
  • Depending on the size of your chicken, each piece will fry a different amount of time. Bigger chickens will take much longer to cook. The average cooking times are as follows:
    • Breasts: 8-11 min
    • Thighs: 9-12 min
    • Legs: 6-8 min
    • Wings: 4-5 min
