Tuscan-Asian Fusion Shrimp

Winner of the Clever Creations Recipe Contest - Lin W. 1st Prize


16 oz. dry linguine
2 Tbsp. olive oil
2 Tbsp. butter or margarine
1 large onion sliced lengthwise
4 cloves garlic, minced (about 2 tablespoons)
2 - 4 Tbsp. sweet chili sauce
1/4 cup MITSUKAN Mirin Sweet Seasoning
1/4 cup mild miso (soybean paste)
1/4 cup chicken broth
1 lb. small shrimp (31-50 count), peeled and cleaned
1/2 cup chopped basil, plus 2 tablespoons minced basil for garnish


Cook pasta according to package directions. Drain, rinse well, and keep warm.

Meanwhile, in a large saute pan or wok over medium heat, place oil and butter. Add onion and sauté gently until translucent.
Add garlic, sweet chili sauce, Mirin, miso and chicken broth. Bring to a boil slowly, reduce heat and simmer 5 minutes, covered. 

Increase heat to medium; add shrimp and basil. Cover and simmer gently about 5 minutes or until shrimp are pink and curled. Stir in more Mirin or chicken broth, if desired for a thinner sauce. Serve over pasta. Garnish with minced basil.

Suggestions: Serve over linguini or other pasta

Makes 4 servings.

Judge's Comments
• Tasty dish, nice flavor combination-- though ingredients are not mainstream (not everyday ingredients for most home cooks).
• Quite spicy even with 2 tablespoons sweet chili sauce. Also a bit on the salty side.
