Vinaigrette Soup with Root Vegetables



1/2 boneless chicken thigh 
1 1/4 cups Daikon radish 
1/3 carrot 
1 to 2 leafy greens 
1/2 section lotus root 

3 cups water 
1 Tbsp. chicken soup bouillon 
2 Tbsp. Mizkan Rice Vinegar 
1 Tbsp. Mizkan HONTERI® Mirin Seasoning
1/2 tsp. salt 

Coarsely ground black pepper to taste


Cut daikon radish and carrot into rectangular slices. Cut lotus root lengthwise in half, then slice across thinly into half moon shape.

Slice chicken meat into 1-inch cubes.

In a pot, put all seasonings together into water and bring to boil. Add radish, carrot and chicken and continue to cook until vegetables are cooked. Add finely chopped leafy greens to the pot and cook a few more minutes. Sprinkle black pepper to taste and serve.
