Chinese Chicken Salad

Now you can make this popular restaurant dish at home!


3 Tbsp. HOLLAND HOUSE White Wine Vinegar
1 Tbsp. each soy sauce and honey
2 tsp. sesame oil
2 boneless, skinless chicken breast halves, cooked and sliced
8 cups coarsely shredded iceberg lettuce (approx. 1 medium head)
1/2 cup chopped cilantro
1/3 cup chopped roasted peanuts
1/4 cup sliced green onions
3 Tbsp. chopped crystallized ginger


In a small bowl, combine vinegar, soy sauce, honey and sesame oil.  In a large bowl, combine remaining ingredients.  Toss with dressing and serve immediately.

Makes 4 to 6 servings.

  • For added flavor, season uncooked chicken with salt and sprinkle generously with sesame seeds.  Sauté in a peanut oil; cool before slicing or shredding.
  • Crystallized ginger is available in the spice or ethnic food sections of supermarkets, and in Asian food stores.
