Chicken Marsala Jus

SERVING: 1 quart
TIME: 20 minutes
PRODUCTS: Mizkan Marsala Cooking Wine


1 small shallot, diced

2 Tbsp. olive oil

1 cup Mizkan Marsala Cooking Wine

2 ½ cups chicken reduction

1 ½ cups water

Ground black pepper, to taste


  1. On a saucepan over medium heat, sweat the shallots in the olive oil.
  2. Add the Mizkan Marsala Cooking Wine and simmer over heat until it reduces by half.
  3. Add the water and chicken reductions; stir and bring to simmer, reducing to desired consistency.
  4. Enjoy with chicken, turkey, duck, or pork.
