Green Chile Huevos Ranchero

TIME: 20 minutes
PRODUCTS: Mizkan Green Chiles


Chipotle Refried Beans
4 Tbsp. pinto beans, canned

1 tsp. chipotle pepper paste

1 Tbsp. olive oil

Salt and pepper, to taste


Green Chile Cream
¼ cup Mizkan Green Chiles

1 cup heavy cream

Salt and pepper, to taste


Green Chile Huevos Ranchero
½ cup green Chile guacamole

4 Tbsp. chipotle refried beans

¼ cup green chile cream

10 slices red pepper, julienned

¼ cup caramelized onions

2 quail eggs, sunny side up

2 tortillas, fried

Salt and pepper, to taste


  1. To make Chipotle Refried Beans, fry beans and peppers in olive oil until heated through.
  2. To make Green Chile Cream, bring Mizkan Green Chiles and heavy cream to a simmer in a small saucepan. Let simmer until it reduces by half and season with salt and pepper, to taste.
  3. To assemble dish, spread chipotle refried beans on the fried tortillas. On top of the beans, add the caramelized onions and red pepper slices. Put 2 Tbsp. of green chile cream, lay the sunny side egg on top, and serve with green chile guacamole on the side.
